I'm considering adding my 14 year old niece's Iphone to my Kindle account. I read a lot of serial killer type books which aren't suitable for her just yet. Can I restrict the books she will be able to download to it in any way?  Or will she "see" everything I have on my Kindle.  Thanks

Add her iPhone to your account, download the books you want her to have to her iPhone and then deregister her phone.  This way she can't poke around.

Of course, this does then raise the issue of trust. Would it not be better to explain the type of literature you would like to see her reading, leave her associated with the account, and then have a word if you see things that concern you?

Let's face it, when I was 14 I certainly knew how to circumvent parental/supervisoral requests, and that was before the internet. If you don't build up that trust they'll just go around you.
