Greetings --

If I want a current book not in the Kindle Store, i.e. a 2009 Michelin Guide, where might I get it in a format that I can then send to Kindle or format myself to put up on my Kindle?

You could see if it is for sale at other ebook sites, such as fictionwise.com or mobipocket.com

If it is not available anywhere in ebook form, then short of retyping it yourself, you are probably not going to be able to put it on your Kindle. Over in the book corner we have a thread specifically devoted to books we want in Kindle versions that are not available at present.
